On August 3rd, the Sofitel Marrakech Palais Imperial & Spa celebrated its 60th anniversary with a dazzling soirée that transformed the Orangerie restaurant into a culinary stage. The event featured a star-studded four-hand dinner, showcasing the talents of acclaimed Chef Arnaud Viel and Executive Chef Ahmed Edeffaa. Together, they created a mouthwatering fusion of French elegance and Moroccan flair, making the milestone celebration an unforgettable feast for the senses.

Chef Ahmed Edeffaa eloquently described Moroccan cuisine as a flavorful journey through a rich and storied past. With nearly 18 years at Sofitel Marrakech and nine years as the executive chef, Edeffaa has become a prominent figure in the culinary world. He shared his insights on Moroccan cuisine from multiple perspectives: as a Moroccan, a chef, a culinary expert, and a passionate foodie.

Edeffaa considers himself an ambassador of Moroccan cuisine, stating, “I feel even more Moroccan when I travel abroad to collaborate with other Sofitels around the world.” He emphasized the importance of Moroccan spices, which he always carries with him to tell the story of Morocco’s culinary heritage. “These spices narrate the essence of Morocco and make a global impact on the food scene,” he added.

Morocco’s strategic location at the crossroads of trade between Asia, North Africa, and Europe has significantly enriched its culinary culture. Edeffaa highlighted the country’s fortunate position, which has allowed it to develop a unique and balanced cuisine. “Moroccan cuisine and Morocco itself have a history spanning 13 centuries, with numerous dynasties, starting with the Idrisid dynasty, the Almoravid dynasty, the Almohad dynasty, and the Alaouite dynasty, each coming from a different region. This rich blend has given Morocco an incredible balance,” he explained.

Reflecting on the 60th anniversary event and his collaboration with Chef Arnaud Viel, Edeffaa shared that their long-standing friendship had always included discussions of creating a dinner together. After seven years of anticipation, this plan finally came to fruition, perfectly aligning with Sofitel Marrakech’s 60th anniversary and a beautiful celebration of His Majesty’s 25th anniversary.
